引言

相传公元前164年,汉高祖刘邦之孙刘安被封为淮南王炼丹时,偶然将石膏误入豆汁中而发明了

豆腐。1960年在河南密县打虎亭东汉墓发现的石刻壁画认为是描写制造豆腐的过程,说明汉代发明的

豆腐未曾将豆浆加热制成的原始豆腐,未能进入烹调主流。到宋代,可能因加热豆浆工艺的发明豆腐才

成为老百姓日常生活中重要的食品。湖南是湿热之地,武冈位于湖南中部雪峰山南脉,水质呈弱碱性,

打成的豆浆没有及时加热便易发酸沉淀,偶尔有人舍不得而继续装箱压榨制成豆腐,口感紧实而有韧性,

即发明了酸浆豆腐。明永乐二十一年(公元1423年),岷王朱楩被一纸诏书封地蛮燎猖獗之地武冈,

把宫廷卤菜技术带到武冈,就地取材以武冈云山丰富的药食同源植物为卤料,经反复浸煮卤制,形成了

独一无二的武
